Green pumpkin pie smoothie

After stumbling across this recipe on A Full Measure of Happiness, I knew I would have to try it. I love green smoothies and I love pumpkin pie smoothies. Why not combine the two?

Ingredients:

  • 2/3 cup pure pumpkin
  • 2/3 cup plain, non-fat Greek yogurt
  • 1/8 teaspoon cinnamon
  • 1/4 teaspoon pumpkin pie spice
  • 1 packet Splenda
  • 1/8 cup oats
  • 5 stems kale, torn into pieces, stems removed
  • 1 frozen banana
  • 6 ice cubes
  • 1/2 to 2/3 cup of water

Put ingredients into blender and blend until smooth. If you put the ice and frozen banana on top, it will help to weigh down the kale and will blend more easily.

I really liked this smoothie. It’s a nice mix of the two smoothies but doesn’t taste particularly like one or the other. The pumpkin helps to give the smoothie a nice rich, creamy flavor and the added spices are really nice. My boyfriend immediately was skeptical of the green color of the smoothie, but drank it anyway without much complaint. I drank mine with a smile on my face.
