Caprese salad

I can’t believe that I haven’t blogged this salad before! It’s my favorite summer salad. So simple and flavorful.


  • 1-2 tomatoes of choice(I used roma)
  • 8 oz fresh buffalo mozzarella
  • fresh basil leaves
  • olive or avocado oil
  • salt and pepper
  • balsamic reduction(optional)

Slice tomatoes and cheese into slices of equal thickness. Layer on a plate with basil leaves. Drizzle with oil and balsamic reduction. Sprinkle with salt and pepper. Sprinkle with ribbons of basil if desired.

This salad is the only way I can get Brian to eat tomatoes besides in a marinara or pizza sauce. This particular salad may have been a little heavy on the cheese and a little light on the tomato, but who is judging?
