World’s easiest breakfast muffins

I saw this idea on Pinterest and thought it had to be too easy to be true.

Healthy and easy breakfast muffins.

Preheat oven to 350F.

Take a box of your favorite muffin or cake mix. I just bought a box of muffin mix on clearance to give it a try.

DO NOT FOLLOW THE DIRECTIONS ON BACK. Instead, mix in one can of pure pumpkin until smooth.

Scoop into greased muffin tins. Bake the minis(if you made minis) about 15 minutes. Bake the big ones about 20-22 minutes.

Let cool and eat. They were moist and delicious and didn’t last long in our house.While I used an apple cinnamon muffin mix, the pumpkin flavor was strong. They were good, but I probably wouldn’t recommend it with a blueberry mix.

I can’t wait to try this with a box of Jiffy corn muffin mix. Pumpkin flavored corn muffins? Yum! And I’m always looking for ways to make a healthier version of corn bread.
