Fresh pesto

My basil plants were starting to become very overgrown. What else was I to do but make some pesto. Pesto is something that I enjoy but don’t use often as it is high in calories and fat. But it’s oh so tasty.

We had some nice rotisserie chicken and I couldn’t stop thinking about making a chicken, pesto and fresh mozzarella sandwich. After making some homemade tomato soup this morning I knew it would be the perfect pairing.

Pesto:
2 cups fresh basil leaves
1/4 cup pine nuts, toasted
3/4 cup parmesan cheese
2 cloves of garlic, sliced in half
5 tablespoon olive oil
salt and pepper(optional)

Put the basil, pine nuts, Parmesan, garlic and a little salt and pepper in the food processor and pulse until finely ground.

Once finely ground, slowly add in the olive oil until well combined.
