Who gets tired of eating chicken? I do! I try to make it as many ways as possible so I forget that I am eating chicken again.
This is a flavorful and healthy recipe.
- 1 pound of boneless skinless chicken breasts, pounded to 1/4in thickness
- 1 pound baby portabellas, sliced
- 1/2 small onion, diced
- 2 tablespoons butter
- 2 cups brown rice, cooked
- 1 cup chicken broth, hot
- salt and pepper
Place one tablespoon of butter in a skillet over medium-high heat. Let heat and start to brown. Salt and pepper chicken breasts. Then add in chicken breasts and cook for about 4 minutes on each side, or until chicken starts to brown. Remove chicken from pan, set to the side. Slice into 1 inch slices.
Add 2nd tablespoon of butter to skillet, turn down to medium heat. Add onion and saute until glassy. Add mushrooms and cook about 7 minutes until soft.
Add one cup of hot chicken broth to the mushrooms and onions. Bring to a simmer and add chicken back to pan. Let entire mixture simmer for about 10 minutes so the broth has time to reduce a little.
Serve over 1/2 cup brown rice.
